◆朝水揚げしてすぐに加工場にて加工をするため鮮度を維持しております。
◆獲れたての魚はまだ旨味が少ない!魚の身にはATP(アデノシン三リン酸)という成分が含まれていますが、死後からIMP(イノシン酸)という旨みに変化していきます。これが熟成です。
◆機械を使わずに熟練の職人が手作業で丁寧に捌き、スライスにしております。
◆冷凍にもこだわりが!弊社の使用する冷凍機材はブライン凍結機を使用!
ただ冷凍するだけではゆっくり温度を下げて凍結するため、氷の結晶が大きくなり細胞を破壊して、旨味成分が流出してしまいます。
しかし、ブライン凍結は食品内の水分が凍る0℃～-5℃の温度帯を短時間で通過させることができ、氷結晶の成長を抑え細胞破壊を防ぎ、食品の品質を損なわずに凍結することができます。

→真空パックのまま流水で5分ほど解凍して下さい。
※解凍時間は目安です。気温、水温により異なりますのでご注意ください。
※お湯やぬるいお水での解凍は品質が悪くなることがありますのでご注意ください。
